Chocolate Cherry & Raspberry Cookies

After every holiday, I buy candy when it goes on sale and put it in the freezer.  When I decide I want to bake something sweet, I go check out my candy stash in the Freezer.

Once the decision was made to bake cookies today, I scrolled through Pinterest looking for inspiration.  I saw these wonderful chocolate thumbprint cookies made with cherries and chocolate fudge.  Hmmmm….I go to the freezer and pull out a bag of  Raspberry Hershey’s Kisses and a bag of Cherry Cordial Kisses.

The cookies turned out great but I had some people that weren’t fans of raspberry and cherry.  The great thing about this recipe is that you can use any flavor of  Hershey’s Kisses. For example, I have seen the peanut butter cookies with chocolate kisses around for years.  I think using this chocolate cookie with White Chocolate Kisses or Peanut Butter Kisses would be great.  What about mint kisses?  Or ones with Almonds?

You can go two ways with this cookie.  The dough is really, really thick.  You can leave it as is and it will make a thick crunchier cookie or you can add milk or creamer and end up with the fudge-like soft cookie like I did.  I used French Vanilla Creamer in my cookie.  Almost anytime a recipe calls for milk, I add creamer instead.  It gives it that extra little touch.  Just remember….if you use the creamer – the cookies will be soft and fudge-like….- not hard !

Ingredients:

1 1/2 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 tsp baking soda
1/4 tsp baking powder
1/4 t salt
1/2 cup ( 1 stick) butter, softened
1 cup sugar
1 egg
1 1/2 t vanilla
3 tbs creamer or milk (if you want a soft cookie)

Preheat oven to 350 F.

Mix the flour, cocoa, baking soda, baking powder & salt together.  

In a mixer beat the butter,  sugar, egg, and vanilla. Add the flour mixture & beat until well mixed.

Roll the dough into 1-inch balls or use a small ice cream scoop and  place them 2 inches apart on an ungreased cookie sheet or parchment paper.

 Bake for 10 minutes.

 Remove from oven and immediately place your Hershey Kisses in the center of each cookie.  

If you want the kisses melted,  they can be pressed down (like the ones in the pictures).  Simply place them back in the oven for about one minute.  

Remove from oven and immediately take the back of a spoon (so you don’t burn your finger) and gently press the kisses down.  

Makes about 16 cookies.
