RAINBOW CUPCAKES

I found these new cute pink cupcake wrappers at my local dollar store and couldn’t wait to get home to make cupcakes.  I decided to make rainbow cupcakes since it has been on my “to try” list for awhile.  To be honest, it was much more time consuming than I thought it would be and mine didn’t turn out those beautiful pictures that I have seen on pinterest but I still think they were pretty.

I love the little wrappers and look forward to using them on future projects.

I used a small melon-baller /scoop  and it worked perfect.

RAINBOW CUPCAKES

To make the cupcakes, I used a white cake mix and added a box of dry cheesecake pudding.  I divided it up into four bowls and colored each bowl of batter.  Using the melon baller, I put one scoop of batter  into each cupcake liner (4 scoops in all) and it turned out to be the perfect amount.

FROSTING

  • 4 cups confectioners’ sugar
  • 1 cup shortening
  • 1 teaspoon vanilla extract
  • 1/4 cup of milk
  • 1/2 box cheesecake pudding

Mix the pudding with the milk.  This keeps the frosting from having that “gritty” taste.

Place the shortening, vanilla  flavoring, and the pudding-milk mixture with an electric mixer on low speed. Gradually add powdered sugar until desired consistency is reached.  The frosting should be light and fluffy.
