Potato Chip, Pecan, Toffee Cookies

I was skeptical when I first saw these cookies. I couldn’t imagine having potato chips in a cookie but they intrigued me so much that I just had to make them. I have to admit that I loved them. They are a combination of salty, sweet, and nutty goodness all in one bite. Of course the potato chips don’t taste like potato chips once they are in the cookie but it adds this wonderful crunchy, buttery goodness. Give it a try and let me know what you think.

INGREDIENTS

  • 2 sticks of unsalted butter, softened
  • ¾ cup packed light brown sugar
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 1/4 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups of crushed potato chips
  • 1 cup of chopped pecans
  • ½ cup of toffee bits (optional)

DIRECTIONS

  1. Preheat oven to 375 degrees.
  2. Beat together butter and both sugars with a mixer on high speed until fluffy, 2 to 3 minutes.
  3. Add vanilla and eggs, and beat on medium speed until just combined.
  4. Add flour, baking soda, and salt, and beat on low speed until just combined. Stir in 2 cups of potato chips, pecans, and toffee bits.
  5. Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets or on parchment lined baking sheets.
  6. Bake until golden, 10-12 minutes.
  7. Let cool completely on baking sheet.
