Quick and Easy Strawberry Cobbler
I have been making this cobbler for over twenty years. It’s quick and easy which is the best part…besides the taste. I have been craving strawberry cobbler so I picked up a can of strawberry pie filing the last time I was in the store. I have made various flavors of the years but strawberry is my favorite.
This recipe makes a 9 x 13 dish but I usually make a half batch and bake in a skillet or an 8 x 8 pan.
Quick and Easy Cobbler:
Ingredients (9 x 13 dish)
- 1 stick of butter
- 1 large (21oz) can of fruit or pie filling
or use fresh fruit sweetened to taste - ¾ cup of milk
- 1 cup of sugar plus 1/2 cup for topping
- 1 ½ tsp vanilla
- 1 cup flour
- 1 ½ tsp baking powder
- dash salt
Directions

Melt butter in the bottom of your baking dish (I just stick mine in the oven while it is preheating).

In a separate dish mix milk, flour, 1 cup of the sugar, vanilla, and baking powder and pour batter over the melted butter. DO NOT STIR.
- Pour fruit over batter. (I use a teaspoon and dollop the fruit around the batter) DO NOT STIR.
- Sprinkle remaining 1/2 cup of sugar over the top of the fruit/batter mixture.
- Bake at 350 degrees for 45 minutes to 1 hour. (check after 45 minutes !)
(For 8×8 dish)
If you are making a half batch simply half all of the ingredients and use 1 (15oz) can of fruit or pie filling. There is no exact proportion of fruit to batter so you can add as much or as little as you like. Bake at 350 degrees for 30 – 40 minutes.
