Rice Krispies Treats

I’m not a huge chocolate fan (I know there will be gasp here) but I am a huge peanut butter fan.  I am still trying to use up some of those rice krispies I have stockpiled and I’ve made banana treats, and strawberry treats, but this time I wanted something unfruity (yes, I know spellcheck is putting that squiggly red line under unfruity) but that’t the word I want to use.  I searched for a peanut butter treat recipe and I kept finding recipes that called for kayro syrup and cooking.  I just wanted a simple basic treat with peanut butter!

I also wanted a little chocolate with it but I was scared to mix it in with the peanut butter for fear of making the treats soggy.  I decided to add a layer of fudge on top.  I just went with the simple sweetened condensed milk and chocolate chips recipe.  This eneded up being a really quick and easy treat to make.

The great thing about making  rice krispies treats is that you can add anything you want.  Jello, pudding, nuts, chocoalte, peanut butter, etc.  The possibilities are endless….I’m thinking cinnamon or pecans next.

Ingredients:

  • 3 Tablespoons of butter or margarine
  • 10oz pkg or 4 cups of min marshmallows
  • ½ cup peanut butter
  • 6 cups of rice krispies cereal
  • 3 cups of milk chocolate chips (or chocolate/peanut butter chips mix – or – white chocolate)
  • 1 can sweetened condensed milk
  • dash of salt

 

Directions:

For treats – In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Add peanut butter, stirring until combined.  Add cereal and stir until coated.  Microwave cooking times may vary.

Using buttered spatula or wax /parchment paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray or line dish with parchment/wax paper.

For fudge – Combine chocolate chips with sweetened condensed milk and salt in 1-quart glass measure. Cook on HIGH (100% power) 3 minutes or until chips are melted, stirring after 1 1/2 minutes and then continue to check/stir chips every 30 seconds.  You do not want to over heat it so you may need to take it out before the 3 minutes.  My microwave takes the full 3 minutes but microwaves vary.

Once chips have melted, pour over rice krispies treats.

Let sit until fudge hardens and then cut and serve.
