Ham & Sausage Lasagna

Twelve years ago, I ate this Ham and Smoked Sausage Lasagna at a friends house and absolutely loved it.  She was kind enough to give me the recipe and I have been making it from this little sheet of paper every since.

This lasagna is very different from other lasagna recipes.  Part of the appeal of this recipe is that it is on the milder, less greasy side and it’s super easy to make.  No chopping onions or adding spices or special cheese needed.  This is really great for someone that can’t eat the harsher sausages that can be found in some lasagna recipes.

The only change I have made to the original recipe is to replace the tomato sauce with spaghetti or pizza sauce.  As you can see by the recipe I was given, there is no specific amount of meat listed.  I used about 1 1/2 cups of chopped ham and about 1 1/2 cups of chopped sausage but you can add more or less to you liking.

I usually make this in an 8 x 8 dish but I have made this in a 9x 13 pan.  This time, the only dish I had clean and handy was a pie plate, so that is what I used.  Hummmm….I guess I made a lasagna pie!

Ok..on to the important stuff…her  is the recipe:

INGREDIENTS

Ham  (cubed)
Smoked sausage (cubed)
Lasagna noodles
Mozzarella Cheese
Spaghetti or Pizza Sauce
8 tablespoons of  flour
1 stick of butter
1 1/2 to 2 cups of milk

DIRECTIONS

  • Cook the lasagna noodles according to package directions.
  • Cube the ham and sausage
  • (For the white sauce) Place the stick of butter in a pan to melt. Once it is melted, add the flour and stir until it thickens.  Add milk and stir constantly until mixture thickens.  It should have  the consistency of gravy.
  • Open you jar of pasta or pizza sauce.

Now – start layering your ingredients

Arrange about 4 cooked lasagna noodles (or the amount needed for your size dish) on the bottom of your baking dish.  It’s ok if it overlaps some. Spoon about half of the white sauce over the noodles then spoon about half of your pasta or pizza sauce over the white sauce.  Sprinkle about half of your meat mixture over sauce and cover with mozzarella cheese.

Repeat layers.

I end with a layer of noodles and extra cheese on top but you can stop with the second layer if you choose to.  I just love all of the noodles and extra cheese.

Bake at 350 degrees for 20 – 30 minutes or until hot and bubbly.
