Peanut Butter brownie stacks

I was craving peanut butter and chocolate and unfortunately I didn’t have any Reese’s peanut butter cups in the house. Digging around in the pantry, I noticed that I had a box of brownie mix.  Chocolate problem solved…now for the peanut butter part.  A little peanut butter, powdered sugar, and butter and viola…..Peanut Butter Frosted Brownie Stack is born.

The best part is that the frosting and brownies can be made ahead of time.  You can make the brownie base any size or shape you want or need.  Add frosting and leave in single layers or stay as high as you would like.

I have an event that I will be making these for and I plan to make small 1 inch circles or squares and will probably only stack them two high.  No one will ever know how quick and easy they were to put together.

For the brownies:  make your favorite brownies using a brownie mix or your favorite brownie recipe.

Cut the brownies into squares, circles, or use your favorite cookie cutter.

 

Peanut Butter Frosting

  • 1/2 cup butter, softened
  • 1 cup creamy peanut butter
  • 3 tablespoons milk, or as needed ( I used liquid vanilla coffee creamer – makes it extra yummy)
  • 2 cups confectioners’ sugar

Place the butter and peanut butter into a medium bowl, and beat with an electric mixer. Add powdered sugar and milk/creamer and mix until the frosting is thick and spreadable. Beat for at least 3 minutes since you want a nice fluffy frosting.
