EASY BROCCOLI & CHEESE CORNBREAD
Cooler weather approaching means more comfort foods including soup and cornbread.
This is one of the most delicious and easy recipes for when you are craving cornbread. I actually add butter, heat it for a few seconds in the microwave, and eat it for a meal.
INGREDIENTS
- 2 packets of any corn bread mix (as long as it makes 9×13 dish)
- 4 eggs
- 1 cup sour cream
- 3/4 cup melted butter
- 12 ounces frozen broccoli, thawed
- 3/4 cup diced onion
- 1 cup shredded cheddar cheese
DIRECTIONS
- Preheat the oven to 375 degree F. Grease a 9 X 13 inch baking dish, or spray with nonstick cooking spray.
- Combine the cornbread mix, eggs, sour cream, and butter. Whisk until smooth.
- Chop the broccoli florets into bite size pieces. Add the chopped broccoli, diced onion, and shredded cheese to the cornbread mixture. Stir until well combined.
- Pour the batter into the prepared pan.
- Bake for approximately 30 minutes, until the edges are golden and a toothpick inserted into the center comes out clean. Cool for 10 minutes before cutting to serve.
