Peppermint Mousse Parfait
Aren’t these just the cutest little parfaits? My sister made these for a family gathering using these small 4 ounce cups. The little parfaits were topped with peppermint sticks and mini Oreo cookies that were dipped in white chocolate and rolled in crushed peppermint.
Peppermint Mousse Parfait
- 1 box (around 9 oz) any chocolate cookie (oreos were used here)
- 2 T melted butter
- 1 box Instant Vanilla Pudding mix
- 1 box Instant Cheesecake Pudding mix
- 2 cups milk
- 1 cup any crushed peppermint candy
- 8 oz cream cheese, softened
- 2 tsp Peppermint extract
- 8 oz Cool Whip, thawed
- red food coloring (optional)
Crush wafers in food processor. Add butter and mix again. Put a layer of crumbs in the bottom of individual dishes. Sprinkle with a layer of peppermint candy
Mix milk and vanilla pudding until blended. Set Aside. Beat cream cheese until fluffy. Add the vanilla pudding, dry cheesecake pudding mix, food coloring and peppermint extract. Beat to combine, then fold in cool whip. Refrigerate for 1 hour.
Sprinkle a heaping Tablespoon of cookie crumbs into the bottom of each dish. Top with a layer of crushed peppermints.
Spoon or pipe into dishes and top with crushed candy. Makes 18 1/2 cup servings.
