SOUTHERN DEEP FRIED SQUASH
This is a summer staple at my house for dinner. I make this fried squash 4 to 5 times a week and my daughter always request it when she comes to visit. Even my 11 month old grandson loves it.
This is more of a “this-is-what-I-use-and-have-never-measured-it” recipe. If you are unsure the first time you make this, go half flour and half bread crumbs. Next time you will feel more comfortable just dumping. You can’t go wrong either way.
I dip my squash in ranch dressing that I make with Hidden Valley Ranch or Walmart brand mix. I make it by the dressing recipe using mayonnaise and milk instead of the sour cream dip recipe. I’m sure it’s good either way.
I also don’t add much seasoning beyond the bread crumbs since I will be using the ranch dip. If you don’t want to dip your Fried Squash, I would add a little seasoning (of your choice) to the flour mixture.
First, gather three of your nicest bowls (like the ones pictured above )☺ Actually, you need some type of bowl/tub or something with a lid if possible. This will make your life much easier. You will need three bowls or dishes. Bowl #1 Flour Bowl #2 egg & milk mixture Bowl #3 Bread crumbs
Start by cutting 3 medium squash into 1/8 inch slices.
Bowl #1 (flour) Take your squash and place into your seasoned flour.
If you have a dish with a lid, put a lid on your dish and shake it. This keeps your fingers clean or at least cleaner.
Bowl #2 (milk/egg) You will need to add 1 large egg and about 1/2 to 3/4 cup of milk. Mix using a whisk.
Add your floured squash to this mixture coating both sides.
Bowl #3 (breadcrumbs) Remove squash from the egg mixture and add to bread crumbs completely coating them.
Great time to use another dish with a lid.
Fry in hot oil until crisp.
INGREDIENTS
- 1 cup of flour
- 1 cup of seasoned bread crumbs
- 1/2 – 3/4 cup of milk
- 1 egg
- 3 medium squash
DIRECTIONS
Bowl #1 In a medium bowl add 1 cup of flour. You can season if you wish. ( I have used a variety of steak and chicken seasonings, Mrs Dash, Powdered Parmesan cheese, and powdered ranch dressing. ) Coat sliced squash in flour mixture until coated.
Bowl #2 In a bowl, whisk together the milk and egg until smooth. Dip flour coated squash slices into egg/milk mixture.
Bowl #3 In a bowl, add about a cup of seasoned bread crumbs. Dip egg/milk mixture into seasoned bread crumbs until coated.
Fry the squash, in batches, until golden brown. Drain on paper towels. Serve with ranch dressing or your favorite dip if desired.
